Blogging and Meal Time Woes

I’m thinking one way to blog more constantly is to blog my longer FB posts. I have all these beautiful blogs in my head that I blog at night, but when push comes to shove, I never sit and write. Hmmmmm, … Maybe I should just ramble into my voice recorder app and upload my spoken thoughts?

anyhow, I have shared a few thoughts in the past about dinner time and being a busy mom. Today I want to share that you can cook healthy in less than an hour. I try not to spend that long, but sometimes, those frozen lasagnas take a while to cook through. LOL

A good meal for our family is one that takes mom 30 minutes to prepare and is relatively healthy. sometimes, a perfectly well-balanced meal doesn’t happen, especially with three kids who often change their minds about what they like and don’t like to eat.

I try to keep on hand tons of fruits and veggies. Veggies are harder to eat in our family so I try to stick to frozen veggies so nothing rots. And recently, I purchased a three-level fruit stand that rests proudly at the end of our kitchen island. It is four feet tall and the fruits are easier to see. I’ve noticed that this display has allowed my children to snack on apples, oranges, and bananas more freely. Occasionally, my three-year-old daughter will go to town on an apple, but because the apple she chooses are 40-minute ordeals, I will find half-eaten apples all over the house. … Fun times. And … at least the kids are eating more fruits.

I was diagnosed with type II diabetes in January. I had been pre-diabetic since 2013 and my A1C has been creeping up each year. I’m sharing this because it has added to the struggle with trying to make meals edible, kid friendly, quick, and friendly for mom. It’s been a journey.

In this post, I want to share with you what we ate last Sunday while watching National Geographic on Disney Plus. by the way, NG has become one of my favorite categories to stream lately.

I ordered an herbed roasted chicken from Sprouts. My children adore this chicken and I try to have the family eat it once a week. sprouts also has these amazingly tasty bread bites that come with cheese, or cheese and garlic. In 20 minutes, those frozen suckers become fluffy and yummy, and paired with fresh herbs, they are out of this world!

side note, I’ve been growing green onions, basil, mint, oregano, and thyme on my window sill and a few snips of herbs paired with meals have really spiced up our plates.

So … roasted chicken, bread bites, and green peas with butter from green Giant. I love, love, love the green Giant steamer veggies. In 4 minutes, you can have a delicious bag of veggies steamed to perfection and ready to eat. green peas and green beans are one of the few veggies some of my children eat.

So, that was Sunday’s dinner … chicken, bread and veggies. Three fifths of the family ate everything including having loads of fun sampling different combinations of herbs on the bread, and the other two fifths of the family … well, they didn’t eat their veggies but they did have seconds on protein and this was a win for me.

  1. I’m also a type 2 diabetic with an ever-increasing A1C level. I’m not a parent, but I have a husband who’s as picky as a child … does that count? At the suggestion of our dietician, we will be starting the keto diet on Monday. It’s got a good history of helping to bring down blood sugar levels, and I’m blown away by the number of recipes I’ve been able to find. Even though this means no breads, pasta, potatoes, rice, and other truly amazing things, I’m really excited about this. I’m considering blogging my experiences, but know I have a horrible history of starting blogs and then abandoning them. Sometime if you’re ever looking for a blog post topic, I’d be interested in how you’re growing your herbs because that’s something I’ve been wanting to do. I live in an apartment though, so don’t really have a lot of spaces or decent windows to put growing things. Thanks for your post.
